A+ Microwave Apple Crisp

Warm apple crisp is my ultimate comfort food. This quick recipe originated in my university days when a friend and I were renting rooms in a home with a kitchen stuck mid-renovation. We relied on burners and a microwave for meal preparation and baking. While many baking recipes don’t lend themselves to microwave prep, this one is a winner.  

When I shared this recipe in my daughters’ school fundraising cookbook, a teacher gave it an A+. I have shared this dessert at family reunions and with colleagues at work. It reminds me of happy meals with friends and family; laughter shared over treats and fall apple picking excursions with my children. Comfort lies in happy times and sweet memories.


Microwave Apple Crisp

filling
4 cups apples, peeled, cored and sliced
1/3 cup sugar
2 tbsp all purpose flour
2 tbsp lemon juice
½ tsp cinnamon

topping
2/3 cup brown sugar
½ cup flour
1/3 cup margarine or butter
1 tsp cinnamon
2/3 cup rolled oats

Add apples to 8×8 inch microwave-safe dish. Mix in remaining filling ingredients. Set aside. In a microwave-safe bowl, microwave margarine or butter for 30 seconds or until melted. Add remaining topping ingredients to melted butter/margarine and mix well. Layer topping over filling mixture. Microwave on high for 10-12 minutes or until bubbly.

  • Gluten-free flour can be substituted for all purpose flour.
  • Fresh/frozen berries or peaches can be used instead of apples.
  • Vegan margarine can be used.
